Method
- Preheat oven to 180°C (350°F).
- Grease a medium-sized baking dish.
- In a mixing bowl, beat sugar, eggs, and jam until light and fluffy.
- Sift in flour, baking soda, and salt. Mix gently.
- Add melted butter, vinegar, and milk. Stir until smooth.
- Pour batter into prepared dish and bake for 40–45 minutes or until golden brown.
- For the sauce: melt all ingredients together in a saucepan over medium heat. Do not boil.
- Pour hot sauce over the pudding as soon as it comes out of the oven. Allow to soak for 10–15 minutes before serving.
- Serve warm
Notes
Serve warm with custard, pouring cream, ice cream, or whipped cream.
Tip: If you want to reduce sweetness, reduce pudding sugar by 50 grams.
Depending on your sweet tooth, it can be very sweet with ice cream, so reach for the cream instead so you can savour every decadent taste.
