Soft Rusks

Soft, cake-like rusks served fresh from the oven.

Ingredients
  

  • 4 cups self-raising flour
  • ½ cup sugar
  • ½ cup oil
  • 2 eggs
  • 1 cup milk

Equipment

  • 1 Mixing bowl
  • 1 Measuring Cups or Spoons
  • 1 Whisk or wooden spoon
  • 1 Baking dish or Tray
  • Baking Paper or Cooking Spray
  • 1 Cooling rack

Method
 

  1. Rub the butter into the dry mixture with fingertips until it resembles breadcrumbs.
  2. Whisk the eggs and buttermilk together. Add this to the dry mixture and mix well to form a soft, slightly sticky dough.
  3. Press the dough into the baking pan and smooth the top, or roll into balls and pack tightly together.
  4. Bake at 180°C for 45-60min until golden brown.
  5. Slice and serve soft (not dried).

Notes

Enjoy warm with butter and jam.

Alternative: 
Condensed Milk Rusks: Replace the sugar with 1 can of sweetened condensed milk for a richer, sweeter, and softer rusk.
